People- Food always tastes better when it's attached to a memory with someone else, whether it's your family Sunday roast or a meal you shared together on holiday. Recreating those moments with food is at the heart of what we do here. My Sister gave me my first cookbook as a little girl and it was that cookbook that started the trajectory of my career as a chef.

Produce- I care of course how a plate of food looks, it's true we eat with our eyes first. But what really matters is how it tastes. I've always had a curious mind when it comes to food and just because a dish comes from one cuisine, it doesn't mean you can't use ingredients from another. Climate, culture, and tradition all affect the food we experience, but all of these elements can still come together in new and exciting ways. One thing is for sure, you won't catch me with tweezers in the kitchen.

Passion- Being self-taught I've had the opportunity to build my career through experience. From authentic Neapolitan pizza to street food to fine dining. I've gained some amazing skills and developed my own signature style, which I hope to share with you.
