This dish originates from Indonesian and Malay cooking traditions. My rendang recipe contains 8 authentic ingredients including; lemongrass, ginger and galangal that are whizzed together to create my signature paste, which is then slowed cooked with brisket beef and jackfruit (vegan option) in a cascade of coconut milk, and aromatic spices such as star anise, cinnamon, cloves and cardamom for at least four hours to intensify the taste. Kerisik, (toasted coconut flesh), brings out nutty caramelized flavors. Zesty Kafir lime leaves complete the cooking.
