I'm Nok, a Thai chef from the streets of Udon Thani. In 2019, my partner Mihai and I quit our jobs, booked a flight, and never looked back.

That leap of faith turned into something we're pretty proud of.

By the numbers: 100,000+ hand-rolled spring rolls. 750 litres of coconut milk. 200+ events a season. Fully booked every weekend.

From Brighton to Leicester to London — our food has travelled, and so have the smiles.

We've cooked for Warner Bros Studios, Holland & Barrett, and the NHS. Corporate lunches, weddings, birthdays — if there are people to feed, we're there.

Thai food is built on four flavours: salty, spicy, sweet, and sour. Get them right, and something magic happens. Every dish we make chases that balance.

We set up anywhere — gardens, offices, event halls — and we move fast. 300 guests per hour fast. Because hungry people shouldn't wait.

Between us, we bring over 40 years of catering experience — but Fan Thai Sticks Catering started in 2019 when we both quit our jobs to build something we actually believed in.

Nok grew up cooking real Thai food. Mihai spent years running catering operations. Together, it was a no-brainer.

We started because event food deserved better than beige buffets and reheated trays. Since then we've fed teams at Warner Bros, the NHS, Holland & Barrett, and Balliol College Oxford — and hundreds of weddings across Essex and London.

2019 — Quit our jobs and launched Fan Thai Sticks from the ground up.

2019–2024 — Grew from a standing start to one of Essex and London's most in-demand Thai street food caterers, delivering 200+ events a year at peak.
