Focaccia is associated usually with Genoa where it's commonly known as fugassa and when it's not made as a simple tray shaped loaf it's topped with a special creamy cheese called stracchino​​. The dough is stretchy but crumbly and is deliciously rich with olive oil and tangy sea salt. Typically it's topped with simple Mediterranean ingredients and is usually finished with that sumptuous creamy cheese that gives it a unique rich flavour.​ We bake everything from the finest ingredients to an authentic Genoese recipe and pride ourselves as artisan producers of the highest quality breads.
