THE INGREDIENTS
To be able to label a Pizza a true Neapolitan Pizza, there are some official ingredients (preferably from the Campania region) that must be included. These are; San Marzano Tomatoes, Tipo 00 Flour, Buffalo Mozzarella or Fior Di Latte Mozzarella, Fresh Basil, Parmigiano-Reggiano & Extra Virgin Olive Oil. We at il Cornicione are proud to reduce our profit to be able to source these ingredients directly from Naples.
THE VEHICLE
By going with a bigger, better van compared to our local competitors, we knew that our goal was to bring the first high-end ‘mobile Pizzeria’ which would also bring high-end performance. The outcome is a beautiful mobile kitchen, luxuriously designed with authentic Italian components including the 1m diameter oven itself, capable of cooking 5, 11-inch pizzas at a time, reaching temperatures of up to 500°c.
THE PIZZAIOLO
Like every Pizzaiolo, the passion and determination of making the best possible pizza are what drive us. From a humble beginning as a pizza Chef in a well-known Italian restaurant chain to becoming a Senior Pizzaiolo at a high-end Italian Pizzeria, Jordan widened his experience, by travelling around Italy from North to South, to test, taste and train to perfect his Pizzaiolo skills.
