What do you need to know from an organiser in order to provide a comprehensive quote?

We prefer as much detail as possible in order to manage your expectations. How many guests? What kind of power is available? Do we need to bring a generator? Are you seeking fine dining or festival food?

What advice would you give to a customer looking to hire a provider in your area of work?

Ask if you are dealing with a real chef or an amateur cook! Is this their sole business or do they throw a half cooked pig on a spit and drag it from one end of the country to another? Do your due diligence (and make sure your caterers are too!). Don't take anyone who has less than a 5 star rating from a local authority or you could be liable for your guests getting ill.

Please tell us a little bit about how and why you started the business.

I was previously working as a chef and realised I wanted to take honestly priced Bistro food out to the masses, to show that classical flavours don't have to cost the earth. Instead of waiting inside a brick building, I converted a horsebox into a mobile Brasserie which I feel is a far better and more modern option. I specialise in Moule Frites (Mussels in White wine on fries0, Garlic crab Frites (Fresh crab meat on fries with aoli & garnish), Garlic buttered king prawns served on fries with sweet chilli sauce and my famous Parmesan Truffle Fries. We've also be seen out and about in Henley providing frogs legs and calamari both on fries.

I've recently been taken on the Cliff Richard and Alfie Boe & Michael Ball tours to provide French Street food to over 30 thousand middle aged fans.
