Oysterman Sam grew up on a boat a stone's throw from the oyster beds of Mersea Island. He spent many years picking oysters on the island before moving on to sell Oysters at Borough Market, London for Richard Haward Oysters. Oysterman Sam opens thousands of oysters every week and recently ranked within the top 5 fastest oyster shuckers in the UK Tabasco Oyster Opening Championships.
