Founded by classically trained Chef Michael, our flagship offering, Cocina Mexicana, was born from a personal story: his immigrant wife’s longing for the fresh, vibrant tastes of home. Together, they now work side by side, preparing genuine Mexican street food using traditional techniques, fresh ingredients, and time-honoured recipes adapted to delight Scottish palates.

From our striking red airstream-style bistro trailer, Cocina Mexicana serves up authentic dishes that celebrate the depth and diversity of Mexican cuisine—made from scratch wherever possible, with an emphasis on freshness, balance, and bold flavour. Wherever we can, we source local Scottish produce, supporting nearby growers and suppliers while ensuring peak freshness and quality. By combining locally sourced ingredients with authentic Mexican spices and methods, we create food that is both rooted in tradition and connected to the place we serve.
