What started as an exploration of how to eat well and feel good has evolved into Mexicorn – a Mexican catering experience dedicated to sharing ridiculously flavourful, health-conscious food across Kent, East Sussex, and London. From a Love of Global Flavours to Next-Level Mexican Street Food. Our founder, Jen, didn’t just stumble into this. Her journey began out of necessity: trying to navigate food intolerances while refusing to give up the foods she loved. Leaning on her background cooking in kitchens everywhere from Northumberland to the Italian Dolomites, she fell down the rabbit hole of lacto-fermentation. She quickly discovered that fermented foods didn’t just heal her gut—they completely transformed the flavour profiles of her cooking, adding an unbeatable tangy, complex depth. While traveling the world (cooking and teaching kitesurfing along the way!), Jen saw firsthand how sharing incredible food breaks down boundaries and brings people together. That belief is the foundation of everything we do today.
