Founded with a deep love for vibrant Mexican cuisine and the healing power of fermentation, Mexicorn emerged to bring unforgettable, flavourful street food experiences to Folkestone, Kent, East Sussex, and South and East London.

We operate out of our vibrant, eye-catching Mexicorn street food gazebo, which serves as a bustling hub of sights, sounds, and sizzling Mexican aromas wherever we pitch up!
What Sets Us Apart? It’s our unique combination of authentic Mexican joy and health-conscious cooking, but most importantly, it is our rigorous commitment to allergen safety. Because Jen’s culinary journey was sparked by her own food intolerances, we understand exactly how stressful eating out can be for those with dietary restrictions.
We are proud to safely cater to coeliac guests. We use specific, dedicated gluten-free equipment and maintain strict kitchen protocols to prevent cross-contamination. This means everyone can enjoy our bold Mexican flavours with absolute peace of mind.

Our Story
Our story begins with our founder, Jen. After discovering the incredible benefits of fermented foods in combating her own food intolerances and improving gut health, Jen began experimenting in the kitchen. Drawing on a rich culinary background that spans from Northumberland to the Italian Dolomites, she started weaving her knowledge of fermentation into her absolute favourite cuisine: Mexican street food.
In 2025, Jen launched Mexicorn I, a Mexican street food cantina, serving Tacos, Elotes, Rice Bowls (Mexican street corn), tequila-based cocktails and Mexican Cervezas. We operated at Folkestone harbour in a fixed pitch and gained a following for our authenticity and our gluten-free food options.
Throughout her global travel and her catering services, Jen experienced firsthand how the joy of shared, vibrant food breaks down boundaries and unites communities. This inspired her core belief: great food and an openness to new experiences open the door to true cultural connection, and everyone deserves a seat at the table.
