From there, I build a menu that balances authentic Jamaican flavors with variety and practicality. I always include staples like jerk chicken, curry goat, and patties, but I also offer twists and seasonal options to keep things fresh and exciting. Every dish has to not only taste great, but also work well in the setting—whether it’s plated, buffet-style, or street-food vibes.
