Creating the perfect menu always starts with listening. I take time to understand what my client wants whether it’s a casual pub vibe, a private event, or something more formal. I ask about their vision, the type of crowd, dietary needs, and the overall feel they’re going for.

From there, I build a menu that balances authentic Jamaican flavors with variety and practicality. I always include staples like jerk chicken, curry goat, and patties, but I also offer twists and seasonal options to keep things fresh and exciting. Every dish has to not only taste great, but also work well in the setting whether it’s plated, buffet-style, or street-food vibes.
