About Ramen Shack Ltd
I spent 15 years in Japan where I met, fell in love with and married Mizuki, the architect, graphic designer, chef daughter of Masaaki Nakamura, a professor of hand made noodle making at Gifu University in central Japan.
Together we established the Tatami Room restaurant in Barcelona in December 2010 and ran it until October 2017. A Japanese tavern specializing in sushi. We honed our skills as sushi chefs there and developed eight different ramen for the UK market. Although neither of us is vegan, we are particularly proud of our sesame and miso vegan ramen. In addition to the vegan ramen, we also have more traditional tonkatsu (pork bone) ramen and chicken-based ramen.
