About Roco BBQ

Roco BBQ is an established, crowd-favourite street food business based in Lincoln, trading at events, festivals, private parties and corporate bookings across the UK.

We specialise in Mexican-inspired comfort food, with our signature slow-cooked birria beef tacos at the heart of what we do. Our birria is cooked low and slow for maximum flavour, served in crisped tortillas and finished with rich consommé for dipping – it’s bold, indulgent and consistently one of the most talked-about dishes at any event we attend.

Alongside our tacos, we’re well known for our loaded nachos, which set us apart from the norm. Unlike standard nachos, we fresh-fry our tortilla chips to order, giving a lighter, crispier base that’s then loaded with high-quality toppings, sauces and garnishes. The result is a product that feels fresh, indulgent and genuinely different.

Our Story

Roco BBQ was born in 2021, at a time when the hospitality industry was forced to rethink everything. After more than 15 years working as a professional chef, across busy kitchens and high-pressure service environments, the pandemic created an unexpected pause — and an opportunity to do things differently.

What started as a small idea during Covid quickly became a passion project: taking the bold flavours, techniques and standards of a professional kitchen and translating them into street food done properly. With a focus on slow-cooked meats, big flavours and food that makes people stop and take notice, Roco BBQ began trading at local events and pop-ups, building a loyal following almost immediately.

As restrictions lifted, demand grew. Word spread fast about our birria tacos and freshly fried loaded nachos, and Roco BBQ evolved from a grassroots setup into a trusted name at festivals, private events and corporate bookings across the UK.
