Firstly, ask the bar company for some information about their experience and their bar service. This allows you to have confidence in the quality of the service, you wouldn't want your hair cut by someone who didn't know much about hair, so why get a bar service that knows little about the drinks they are offering. Ask the provider about their range of alcohol available and why they are serving what they are serving. Also, find out about their equipment as better equipment will mean they will be able to offer a good service. Can they provide ice, how may draught products can be served. Is it only one?

Difficult task! We have had a few bookings through this platform that I am personally proud of.
