Our Story
My Pizza Journey – by Niko
It all started early in my life, watching my mother cook for our family. I was fascinated by the process — how you could experiment, use your imagination, and create something unique and full of love. That’s when my passion for cooking began.
When I moved to Liverpool, England, in 2016, I started working as a pizza chef in a Mediterranean restaurant, where I stayed until 2020. When the pandemic hit, everything changed. Like many others, I was forced to stay home and couldn’t make pizzas for weeks — and that’s when the idea was born: why not start my own pizza business from my garden?
The name “Miki” comes from my father. Sadly, I lost him when I was only 19 years old. I made a promise to myself that one day I would open a company in his name, so he would never be forgotten. Within a month, I registered with the local council, got all the necessary licences, and officially started my small business right in my back garden.
That was a huge step in my life — a dream come true, finally working for myself. The garden setup became a big success, but because it was in a residential area, it soon got very busy and noisy. Out of respect for the neighbours, I decided to close it down.
But when one door closes, another one opens. I was invited to open a stall at The Botanical Garden in Liverpool’s Baltic Triangle, and later at Box Yard, near the docks on Great Howard Street. Both were seasonal spots, and I ran them at the same time, employing a small team to help me.
When those seasons ended, another opportunity came — to collaborate with the owner of Frederiks, a jazz club on Hope Street, to bring my pizzas there. After that, I opened a site at Modo in Concert Square, right in the heart of Liverpool.
In the meantime, I expanded my business and built three catering trailers: • Two permanent trailers based at St John’s Market and Edge Lane Shopping Centre, • And a third one specially designed for mobile catering — weddings, private parties, corporate events, and local markets.
Everything went very well and made a big impact on my life. I went from being someone who had worked for others for nearly two decades to someone who had around 20 people working for him.
Later, I got married and became a father to a wonderful boy. That changed my priorities. I decided to sell most of my business and keep just one catering trailer, so I could continue doing what I love while spending more quality time with my wife and son.
Pizzeria Miki still exists today — now run solely by me, Niko. When my son starts primary school, I plan to focus fully on growing the business again. The passion is still there, and I’m excited for what’s to come.

Fantastic!
Nikolai is amazing. His pizzas are amazing! From the start of the booking process Nikolai was so efficient and a pleasure to liaise with. Everyone was saying what great pizzas were being made fresh. We'd love to have Nikolai attend more of our events. Thank you
