What advice would you give to a customer looking to hire a provider in your area of work?

When it is about wood-fired pizzas, is not as easy as people may believe. If the provider has no previous work experience as a pizza chef particularly in an authentic Italian restaurant I would not take my chances. Wood-fired pizzas require extra skills and good chefs would work only with their own secret dough.
As a piece of advice in Italy for example, the pizza chefs are really running the restaurants, not the owners and the whole restaurant success sits with the chef's secret dough recipe.
Another point to look for is the equipment they use. Best artisan pizzas can only be made at high temperatures above 380 C, and having a professional wood oven is very costly and it looks ginormous because of many layers of isolation. No oven under 400 C is professional equipment. And even here we can go further with oven brand imagine one trader uses the Ferrari of ovens and another one uses a Vauxhall version what would you choose?

Pizza di Prato was born from a combination of my passion for pizzas that started at a very young age and also was a great opportunity following on from my higher education path in the management of a small business.
